How to fight unjust parking ticket?

I woke up this mourning ready to move my car. the sign says no parking 8a-6p. so I got out at exactly 8 am and was right there going to my car. The officer was peeping around my car. he saw me then scanned my car and left to go back into his truck. I started my car and it says 8:00A.M. then i began to start driving and he got out and stopped me, giving me a ticket for 8:02A.M. Violation. How ridiculous is that? How can I fight this? or am I screwed because NYC is so unjust and officers have nothing to do but go around slapping random tickets...
